Maxime Oudiette cultivates 4 hectares of vineyards in the Vallée du Petit Morin, and his Chardonnays have been organically certified since 2024. His plots in Beaunay are farmed according to organic principles, but without certification. Maxime's first harvest took place in 2015, and the first Maxime Oudiette champagne was sold in 2020.
The winemaker trained at the Champagne houses Thuillier and Jacques Selosse. Using various techniques, Oudiette ensures that the vines are healthy in healthy soil. With a minimum of resources and intervention, they produce ripe fruit.
By harvesting grapes per plot and vinifying them separately, Oudiette gains a good understanding of the different characteristics of the vineyard plots and can produce a wide range of champagnes.
Maxime is an innovative winemaker and enjoys experimenting with new techniques. For example, he uses the yeasts present in the plot at the time of harvest to produce the sparkling wine 11 months later. The installation of a new winery and the construction of an extension to his cellar, planned for 2026, promise a bright future for Oudiette's champagnes!
