The Girard-Bonnet vineyard covers 12 hectares, located mainly in the Côte des Blancs, more precisely in Mesnil-sur-Oger, Oger, classified as Grand Cru and Vertus Premier Cru and famous for its high-quality Chardonnays.
Paul decided to convert to organic and biodynamic viticulture to raise awareness of his practices. The vineyard will receive certification in 2023.

The vinification process reflects the estate's belief that good wine begins with healthy grapes. Grapes from lieux-dits, or specific terroirs, are pressed separately. Their juice is then naturally settled and placed in various containers before undergoing the natural fermentation process.
The wines then mature on the lees for at least 10 months. They are then racked, without fining or filtration, and placed in the cellar to undergo secondary fermentation for a period that varies depending on the cuvée. Paul is currently exploring various methods depending on the packaging: wooden containers of various sizes, stainless steel tanks, and amphorae.
