About Cazé-Thibaut

In 2013, Fabien Cazé took over the family business in Châtillon-sur-Marne, in the heart of the Marne Valley. He works in an environmentally friendly manner and carries out all vineyard work by hand. In addition to his work on the estate, he teaches vine pruning at the Avize Wine School, where he shares his knowledge with a new generation of winemakers.

In the cellar, he resolutely chooses old oak barrels and works exclusively with indigenous yeasts; stainless steel is never used. The wines mature for several years in his impressive cellars and are aged at a minimal dosage. A striking detail is that bats, via openings in the cellars, help to naturally control insects.
