The Clos Saint Hilaire is a 1 hectare plot, located in Mareuil-sur-Ay, and planted exclusively with Pinot Noir. Its name comes from the patron saint of the village, Saint Hilaire. The wine growing is sustainable and horses and sheep have replaced machines.

This unique single plot Champagne, blanc de noirs, 100% made from the 2006 harvest, was vinified in oak barrels.

Billecart Salmon is a Champagne house largely owned by the Billecart family. Mathieu Roland-Billecart has been at the helm since 2019. Most of the estate's vines are farmed organically and biodynamically. Some grapes are also purchased from other winegrowers, making Billecart Salmon a Négociant Manipulant (NM).

The champagnes Billecart Salmon produces are meticulously crafted, featuring some of the most famous vintages. The winemaking techniques are highly sophisticated, involving barrel-ageing and long cellar aging.
