The young, talented Tom Gauditiabois mainly cultivates meunier on the 7 hectares of land he works in Chézy-sur-Marne and the surrounding area.
In the vineyard, work is carried out as naturally as possible. The same principle applies in the cellar. During the harvest, the best grapes are selected and pressed together. This means the blend will be different every year, and Tom constantly reinvents himself. With a laissez-faire approach and various barrel sizes, Tom consistently produces very exciting champagnes.
