About Cazé-Thibaut

In 2013, Fabien Cazé took over the family business, located in the village of Chatillon-sur-Marne, in the heart of the Marne Valley. His viticulture is environmentally friendly, and all work is done by hand. Fabien also teaches vine pruning at the Avize Wine School, where he passes on his expertise to the younger generation.

Fermentation (using indigenous yeasts) takes place exclusively in old oak barrels; stainless steel is prohibited. His wines mature for several years in his magnificent cellars, and dosages are minimal. The cellars have several openings used by bats, which naturally control the insect population.
