The house behind the Ayala champagne

The man behind Ayala champagne is Edmond de Ayala. Edmond comes from a family where excellence was the norm. He moved to Aÿ in 1860, where he began learning all about winemaking. This proved successful, and the Ayala champagne house was soon founded. The champagne house quickly became a leader, both in France and abroad. This was partly due to his brother, Fernand de Ayala. In 1863, he worked among the British aristocracy in London and introduced the unique champagne to British connoisseurs. The unique style and flavor, achieved through balanced Chardonnay blends, quickly won over connoisseurs. By 1920, the house was producing around a million bottles annually, and the staff had grown considerably.
