Clos de L'Abbaye is a half-hectare plot of Chardonnay in Vertus. Fermentation takes place in oak barrels from Burgundy that have been used for 5 years. The malolactic fermentation is blocked and the champagne rests on yeast for at least 72 months before being disgorged.
