Blanc de blancs XXI

This cuvée is made from 100% chardonnay, from villages such as Bouzy (Montagne de Reims) and Grauves (Côte des Blancs).

The wine has been left on the lees for at least 16 months and half of the reserve wines were vinified and aged in oak.

This champagne is perfect as an aperitif or to combine with dishes such as poultry, fish and salads.

Generations of grape growers within the family had already preceded him, when in 1945 René Brice launched a champagne domain in Bouzy with his name. From the 1990s onwards, the family business grew to an annual production of around 100,000 bottles. At the same time, Brice made a name for himself with his still red wine: Bouzy rouge. In addition to vineyards around Bouzy, the family has plots of Pinot Noir and Chardonnay in the Aube, the southernmost part of Champagne.

A few years ago, the very experienced champagne maker Christophe Constant was hired for production in the cellar. The grand cru champagnes remain in the cellar for at least three years, the dosage of all champagnes is low: fruitiness and freshness are paramount in Brice's style.

The Brice family pays a lot of attention to the transition to a more sustainable way of working. Pesticides are banned from the vineyards, and the process for organic certification was initiated in 2020.
