Cuvee refers to the contents of a tank or barrel with fermenting wine. In practice, the word is used for a specific wine that will end up in a bottle. Most champagne makers produce several cuvees every year, in other words: several wines. For instance a blanc de blancs, two different blends, one drier than the other, a rose and if possible a vintage champagne.
