Cazé-Thibaut
For ten generations the family of Fabien Cazé consists of active winegrowers in het heart of the Marne valley. Roger Cazé started the commercial production of champagne in 1953. Nowadays Fabien Cazé, who debuted with his first champagne in 2013, is the face of domain Cazé-Thibaut, shifting the focus to terroir and the wellbeing of the vineyards.
Herbicides and pesticides are not allowed in the vineyards around Chatillon-sur-Marne, on the northern bank of the Marne. In cellar the grapes are fermented in used barrels, the champagnes are allowed extensive time to ripen, and the dosage is low. With meunier as the main grape Cazé-Thibaut produces lively, focused and fresh champagnes.
