Fabien Cazé's family has been winemakers for ten generations in the heart of the Marne Valley, in the village of Chatillon-sur-Marne.
Since 2013, Fabien has been at the helm and the Cazé-Thibaut estate focuses on attention to the terroir and the well-being of the vineyards. The viticulture is environmentally friendly and all work is done by hand. Fabien also teaches pruning vines at the Avize wine school, passing on his knowledge to the younger generation.
Fermentation (indigenous yeasts) only takes place in old oak barrels, stainless steel is avoided. In his beautiful cellars, his wines mature for several years and the dosages are minimal. The cellars have a number of openings that bats use and that naturally keeps the insect population in check.
In addition to the Crayère and Naturellement cuvées, a number of very interesting 'single plots' are also produced in small editions, which will certainly appeal to the enthusiast.
